When Prime Minister Narendra Modi name-checked avocado toast in his recent public remarks, pointing out that Indian farmers are now growing the fruit that “enhances the taste of your toast” while boosting their own incomes, it did more than make for a viral clip. It put a spotlight, once again, on a dish that has quietly become shorthand for a generation’s relationship with food: smart, visual, wellness-first, and always camera-ready.

Avocado toast has had a good decade. What began as a café menu staple travelled from Sydney brunch spots to Instagram grids to, now, a Prime Minister’s talking points on self-reliant farming. But for Gen Z, the generation that made it famous in the first place, the smashed-avocado-on-sourdough moment has already moved on. The bread is still there. The avocado has company.

Avocado Cottage Cheese Toast

The protein-hungry cousin of classic avocado toast doesn’t drop the avocado, it just stops treating it as the whole show.
