The demand has less to do with novelty than consistency: Gymkhana has simply never stopped being the table everyone wants, which in London’s crowded fine-dining scene is its own kind of achievement.
Bungalow, New York
Chef Vikas Khanna’s Bungalow, opened in the East Village in 2024, has been called his final restaurant, and New Yorkers have responded by making it nearly impossible to book. The Infatuation named it among the city’s toughest reservations within months of opening, and Bloomberg called it the most exciting new Indian restaurant in New York. With décor inspired by Indian country clubs and a menu spanning dishes from across the country’s 28 states, diners frequently resort to lining up for walk-in spots rather than waiting on the online system.

El Celler de Can Roca, Spain
Run by the Roca brothers in Girona, El Celler de Can Roca has spent years rotating between the top rankings of the World’s 50 Best Restaurants list, its reputation built on a rare combination of technical precision and genuine warmth. Tables are typically released online months in advance and vanish almost immediately, making it one of Europe’s most enduring hard bookings.
The Bank Tavern, Bristol
Few restaurants in the world have built a reputation quite like this one. The Bank Tavern, a historic pub in central Bristol with just seven tables, became known for a waiting list that once stretched to four years for its award-winning Sunday roast, a backlog caused partly by pandemic-era closures. When bookings for 2025 opened on New Year’s Day, every Sunday lunch slot for the entire year sold out in just 13 minutes. It is proof that exclusivity has nothing to do with tasting menus or tweezered garnishes; sometimes it is simply a very good roast dinner and seven tables.

Nina, Mayfair
Tucked into a Mayfair basement, Nina has become one of London’s quieter reservation battles, its candlelit atmosphere and dishes like truffle arancini and seabass carpaccio drawing a waitlist that can stretch up to 180 days. Unlike restaurants that lean on spectacle, Nina’s appeal lies in intimacy, and that very intimacy is precisely what makes a table so hard to secure.
Mibu, Tokyo
If every other restaurant on this list rewards persistence, Mibu rewards connections alone. Operating under Japan’s ichigen-san okotowari tradition, which turns away first-time or walk-in guests, Mibu has no menu, no website and no published hours, and its phone is rarely answered. Access comes only through an invitation from one of its members, each permitted to bring guests to just one dinner sitting a year, in a dining room that seats only eight. Chef Hiroshi Ishida’s cooking has reportedly moved even El Bulli’s Ferran Adrià to tears, a review that carries considerably more weight than any online booking system ever could.
Taken together, these six restaurants make the same case as the first six in this series, that in an age where nearly anything can be purchased outright, the truest luxury left is something that has to be earned, waited for, or simply, in Mibu’s case, quietly known about at all.
